Butcher In Residence "Meat" Frank, our new German Master Butcher!

He's originally from Kassel, Germany and he has been a butcher for 34 years!! Our state-of-the-art smokehouse is completely computerized to ensure uniform cooking and a standard product. The majority of our products are Nitrate Free and we are committed to only buying meat from sustainable local family farms.

 

All Our Meats are Nitrate Free! We order whole animals from the farms and cannot guarantee a steady supply of primal cuts, pork chops, steaks, etc. If you are looking for a particular steak or pork cut, please call ahead so we can have it ready for you!

 

Brats – A traditional German specialty, made with naturally raised pork from Little Creek Hog Farm
Beer Brats – A twist on the traditional bratwurst, the Beer Brat has more spices and is made with our Fest Beer
Apple Brats – Fresh apples are added to the Bratwurst for a slightly sweeter sausage Sweet Potato
Liverwurst – Traditional German liver pate with a Southern flair; the rich and savory flavors of the liverwurst are complemented by the sweetness of the sweet potato
Andouille – A Cajun style sausage with just the right amount of kick
Bacon – Our bacon is cured then hickory smoked to capture all of the great taste
Pastrami – Made with beef from Hoffner Dairy, North Carolina’s first Organic Dairy, our pastrami is cured with garlic and spices before smoking. Makes an Amazing Rueben sandwich!
Hot Dogs – A classic! Made from Little Creek pork and Hoffner Dairy Beef, this hot dog is fresh, healthy and delicious
All Beef Hot Dog – The first hot dog made in North Carolina with North Carolina Organic Beef, our All Beef Hot Dog has a thicker skin and richer flavor than the regular Hot Dogs
Chicken Curry Sausage – A subtle curry flavor complements Rainbow Meadow Farm’s free range chicken
Kielbasa – A wonderful balance of smoke and spice flavors in this Polish classic
Sauerkraut – Cooked in white wine, spices and pastrami pieces, our homemade Sauerkraut is absolutely wonderful!

 

If raising sound and healthy animals is one of the oldest crafts of humanity, then likewise the craft of butchering goes back hundreds of years. In the United States the Craft Butcher is about extinct. That is why we have a joint venture with Gunther Kühle, a German Master Butcher. He imported all his equipment from his homeland and he has set up operation in our building. We work directly with local farms, to ensure that all animals are raised naturally. We have farmers who specialize in grass fed beef, others have free range pork. The meat arrives at our facility fresh. Then we create an array of sausages, hams, roasts and steaks. All our meats are vacuum packed and labeled by farm of origin. This is the unique feature and the basis of our “Farmer to Fork” concept!
 

North Carolina Farms
The Weeping Radish Butchery has a contract program for small farms! We collect meat from the farmer, Frank creates sausages and other charcuterie products and then the finished products are delivered back to the farm complete with personalized farm labels. This gives farmers an opportunity to get the most value from their animals and helps make their farms sustainable. Nooherooka Natural, Meadows Family Farms and Gilcrest Natural Farm are just a few of the farms across
the state who are taking part in this new and unique program!
