Manuel
Baumann from Augsburg, Germany will be the
resident master butcher this summer at the
Weeping Radish Butchery. Manuel spent a week
at the brewery
together with Gunther Kuehle,
our
joint
venture partner, creating an array
of
sausages, from brats to pastrami and a new
liverwurst made with
sweet potatoes. |

The Butcher
This craft is almost extinct. We have a joint
venture with a German Master Butcher and all of his equipment
has been imported. Creating an array of sausages, hams,
roasts, burgers, and steaks,, we identify all cuts of meat by
farm of origin. We also provide a custom service to local
farms in order to allow them to market their own meats directly.
